Integrated cooking technology
Valentine twin deep fryer – 2 × 7/8 litres
Professional 400 mm drop-in twin-pan deep fryer with two baskets. Total capacity of 14.4 kW and a stated output of 38–46 kg per hour. Connection: 400 V / 50 Hz / 3-phase + N + PE via two power cables, each rated at 7.2 kW.
Chrome induction grill – 5 kW
Built-in grill with a 486 × 345 mm HPCR stainless steel cooking surface and one individually adjustable zone. The RTCSTM temperature control allows settings from 0 to 230°C. According to the specifications, the grill heats up from 0 to 200°C in less than 5 minutes. Includes a removable grease tray, dishwasher-safe grease filter, splash guard and cleaning spatula.
Håndwerk 2-burner induction hob
Double induction hob with a glass surface measuring 650 × 325 mm, two cooking zones, control via rotary knobs and automatic pan detection. Mains connection: 400 V / 50 Hz / 3PH + N + PE, 16 A.
Refrigeration & storage
Adande VCS refrigeration/freezer drawer – optional
All-stainless-steel drawer unit that can be used for both refrigeration and freezing. Temperature range from -22°C to +15°C, with a net capacity of 86 litres per drawer. Dimensions of assembled unit: approx. 1100 × 700 × 500 (h) mm. Connection: 230 V / 50 Hz / 1-phase, 340 W.
The Adande can be omitted if desired to create extra free storage space for pots and pans.

Sink area
A flush-mounted Håndwerk sink forms a single, sleek unit with the stainless steel worktop.
Fitted with an Echtermann Comfort Clean stainless steel semi-professional pre-rinse shower with a low installation height of approx. 45 cm, ceramic internal fittings and a single-lever mixer tap. The selector knob allows you to choose between a normal water jet and a shower spray. Suitable for hot water up to 80°C.
Complete professional workstation
This showroom model combines baking, deep-frying, induction cooking, cooling, rinsing and storage in a single 4-metre-long Håndwerk bespoke range. The fully welded stainless steel construction, brushed finish, integrated lighting and distinctive Håndwerk details give the whole unit a high-quality and uniform appearance.

Mobile Craft Bar

A fully bespoke Håndwerk professional extractor hood, crafted from AISI 304 stainless steel and fitted with integrated fresh-air induction. Designed for powerful extraction above the showroom hob, with a focus on air balance, efficiency, ease of maintenance and a sleek architectural finish.

Extraction & fresh air induction
The cooker hood combines professional extraction with an integrated fresh air supply.
Approximately 50% of the fresh air is supplied directly via the cooker hood through an insulated induction plenum. This compensates for part of the extracted air close to the extraction zone.
The ideal operating condition is around 10% negative pressure. This means that a further 40–50% of the air volume must be compensated for via the room or a separate third-party system.
The principle is:
50% integrated air supply + 40–50% make-up air from the room → approx. 10% controlled negative pressure.
A correct air balance is essential for the extraction system to function properly.
Technical installation
The showroom model is fitted with:
- Extraction and supply
- Insulated induction plenum for fresh air
- Ventilation motor for extraction and supply, motor located outside the air flow (= higher quality and longer service life)
- Speed control with multi-position switch
- Ducting and roof penetration accessories up to a maximum of 10 metres from the cooker hood
- Grease filters and grease trap
- Integrated LED lighting
- Installation, delivery and final commissioning are not included in the basic specification described.
Air supply – an important consideration
A professional cooker hood can only function correctly if there is a sufficient supply of replacement air. The integrated induction air system accounts for a significant proportion of this, but does not necessarily provide the full air supply required in the room.
The building owner/client must therefore ensure there is a sufficient additional air supply. Insufficient replacement air can reduce the extraction performance and may lead to problems with negative pressure or the installation.
Fire safety in open-plan kitchens
When installed above fixed deep-fat fryers, particular attention must be paid to the requirements regarding automatic fire-extinguishing systems.
According to the regulations you have specified for a non-compartmentalised or open kitchen, fixed deep-fat fryers in the relevant situation must be fitted with an automatic fire-extinguishing system, whereby the power supply to the fryer is also automatically cut off in the event of a fire.
An automatic fire-extinguishing system is not included as standard, but can be provided or installed separately.
Acoustics & noise
The final noise level of a professional ventilation and extraction system is not determined by the fan alone. Duct runs, building structure, roof and wall penetrations, vibrations, weather conditions and other technical installations also play an important role.
Depending on the fan type and required airflow rate, an indicative noise level of approximately 50 to 90 dB(A) at the fan is specified.
Any additional provisions such as:
- silencers;
- vibration dampers;
- acoustic enclosures;
- noise barriers;
- acoustic studies or measurements
are determined separately and are not included unless expressly stated.
Optional extensions
Depending on the project, the system can be further expanded to include, amongst other things, odour filtration, activated carbon filtration, heated air supply, automatic fire-extinguishing systems and additional acoustic measures.
Not included
Vertical transport and any crane hire, parking permits, odour filters, heated air supply, activated carbon, automatic fire-extinguishing systems and other project-specific options are not included as standard.
Local regulations and project requirements must always be checked in advance. Local fire service or planning permission conditions may impose additional or stricter requirements on top of the generally applicable regulations.
